Orange Rabri

ORANGE RABRI
Ingredients:
Small Cardamom Seeds (crushed) 1-2 nos
Milk (toned)1/2 kg.
Sugar - 1.5 tbsp.
Bread - 1/2 slice (sides removed & ground to crumbs)
Fresh Orange Peel 1/2" piece
Scraped white pith cut into thread fine strips and chopped
For the orange topping:
Agar Agar (China grass) 2.5 gms(1/4 packet)
(soaked in one cup readymade orange juice for 15 mins)
Orange one small (peeled & skin removed)
Sugar 1/2 tbsp.
METHOD:
Boil milk and cardamom in a kadai.
Simmer for 20 minutes on low heat.
Add fresh bread crumbs and cook for about 10 minutes till it turns slightly rabri like thick.
Add sugar to taste.
Mix and remove from the heat.
Add orange peel to it.
Pour the rabri into a shallow serving dish.
Cool till set.
Heat soaked agar agar on low heat for 4-5 minutes (do not boil) till it melts completely.
Remove from fire and wait for a minute.
Pour the liquid over cold rabri set in the serving dish.
Garnish with peeled orange segments.
