HOT AND SOUR BROTH WITH NOODLES
Ingredients:
1-2 tbsp torn yam paste
100 gm button mushrooms, sliced
125 gm rice vermicelli noodles
100 gm mangetout, shredded length ways
2 spring onions, finely sliced
1 red chilli, shredded
Method
Put the torn yam paste in a pan with one litre water.
Heat, and stir until the paste dissolves, then bring to a simmer.
Throw in the mushrooms and cook for two minutes.
Meanwhile, put the noodles in a large bowl and pour over enough boiling water to cover, leave for three to four minutes until just tender, then dram.
Divide between four soup bowls.
Add the mangetout to the soup for a minute, then pour over the noodles.
Garnish with spring onion and chilli before serving.
TIME REQUIRED: 20 minutes
