Ingredients
For the biscuit base

1 cup digestive biscuits, crushed
1/3 cup butter, melted
For the filling
2 liters full fat milk
Juice of 2 lemons
3 tbsp cheese spread
1 1/2 cup grated chopped dark chocolate (cooking chocolate)
1/2 cup (100 grams) cream
6 tbsp powdered sugar
2 tbsp milk
1 tsp vanilla essence

Ingredients:

1-2 tbsp torn yam paste
100 gm button mushrooms, sliced
125 gm rice vermicelli noodles
100 gm mangetout, shredded length ways
2 spring onions, finely sliced
1 red chilli, shredded

Method
Put the torn yam paste in a pan with one litre water.
Heat, and stir until the paste dissolves, then bring to a simmer.

Ingredients:

olive oil for frying
2 cloves garlic, finely sliced
800 gms plum tomatoes,
drained handful of basil leaves (optional)

Method
Heat 3 tbsp olive oil in a pan, add the garlic and cook gently for three to four minutes until it starts to stick to a spoon.
Add the plum tomatoes, stir, cover and simmer for 20-25 minutes until the tomatoes have broken down into a thick sauce.

INGREDIENTS:
250 gm maize flour
1 cup potatoes (boiled and mashed)
1 cup methi (fenugreek) leaves (finely chopped)
1 tsp green chillies (finely chopped)
1 tbsp coriander leaves(chopped)
1 tsp ginger-garlic paste
1 cup wheat flour
ghee for frying
warm milk
salt to taste

TRIANGULAR MASALA PURIS 

INGREDIENTS
1 cup Maida
1 cup Wheat Flour
1 tsp Red Chilli Powder
1 tsp Cumin Powder(roasted)
3 tsp Kasoorie Methi
3 tbsp Ghee
Oil for frying the puris
Salt to taste

METHOD
Sift the maida, atta, salt and the spices.
Mix the methi leaves and the ghee.
Add water to form a stiff dough.
Divide into portions to form round balls of the big enough size to roll out into a large-sized roti with quarter inch thickness.
On a floured board, roll out each ball into a large circular roti.
Cut the roti with a knife into 4 triangles by making a cut midway both horizontally and vertically.
Heat oil and deep fry puris.

Ingredients:

1cups Pineapple juice
Sugar to taste
2 cups Ginger ale, chilled
1/2 cup Grapefruit juice
125 ml boiling Water
2 Tea Bags
1/2 cup Orange Juice
1/4 cup Lemon Juice
1 cups Ice water
For the garnish
Lemon and Mint

Method
Infuse the tea bags in 125 ml of boiling water.

Blend the yoghurt with all the ingredients except the soda.

1/2 Egg White
300 ml Sorbet Liqueur
1/2 Vanilla Pod
600 gm Pineapple

In a clean pan, heat the split vanilla pod in syrup.

Puree the fruit and strain.
